Ingredients 1 cup Sideaway Foods quinoa, rinced
1 large red pepper, diced
1 cup canned chickpeas
1/2 cup green onions, sliced
1/2 cup yellow raisins
2 tbsp cilantro, chopped
1 tbsp extra virgin olive oil
Instructions
In a medium saucepan, bring quinoa and 2 cup s water to a boil. Reduce heat and simer until water is absorbed, 20 minutes. Fluff with a fork and set aside to cool.
In a large bowl, combine red pepper, chickpeas, green onions and raisins.
Stir in cooled quinoa.
Drizzle with olive oil and top with cilantro.
