Farro Risotto

Sideaway's take on an Italian classic.

Ingredients 1 tablespoon unsalted butter, separated

1 medium onion, diced

2 cloves garlic, minced

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup Sideaway Foods Farro

1/2cup white wine

3-1/2 cups chicken broth

1/2 cup parmesan cheese


Instructions

  1. Heat a medium sauce pan over medium heat. Add in the butter and let it melt. Toss in onions and sauté for 10 minutes, stirring frequently, until browned and very fragrant.

  2. Stir in the minced garlic, salt and pepper and let cook for 2 minutes, until fragrant. Add infarro and stir to coat completely, then let it toast for 2 minutes.

  3. Add in the wine, stirring continuously to keep it from sticking. Once wine has been completely absorbed, add in the broth a half cup at a time and stir continuously. Repeat this until all broth has been added and the farro is cooked through.

  4. Toss in the parmesan cheese and stir well to combine. Serve immediately.
